Snow Cheese Topping step-by-step
To the second post. Hari ni sibuk di dapur buat Snow Cheese Cake. Jadi teringin mau tunjuk how I made the Cream Cheese Topping. Masa mula-mula dapat resepi ni dalam sekitar 2 tahun lepas. Dapat dari Google ja tapi diolah sedikit. Topping ni sesuai jugak untuk buat kek Tiramisu. 

Bahan-bahan:
250gm Cream Cheese (apa-apa brand pun boleh, pilih ja which one would you prefer)
200gm Whipping Cream (both dairy and non-dairy whipping cream could be used)
150gm Icing Sugar (terpulang mau lebihkan atau kurangkan, ikut keselesaan)
1tbs Vanilla Essence (optional)

How to:
Cara 1 (Menggunakan Dairy Whipping Cream)
Before that, Dairy Whipping Cream ni cara kita mau kenal adalah dengan tengok di mana kedai tu simpan. Chiller atau freezer. Kalau yang kena simpan di Chiller tu, Dairy Whipping Cream la tu. Antara contoh yang paling famous dan selamat Anchor Brand Whipping Cream. For me, I usually use the Rich brand. This is how it looks like:


So lets proceed. Kalau pilih yang Dairy Whipping Cream ni, senang, nda perlu defrost, tapi harganya agak mahal. Antaranya kelebihannya tahan tukul, boleh tahan lama siiikit di suhu bilik. Dan kelebihan lagi satu, sesuai digunakan dalam pembuatan ganache-tahan panas-boleh dimasak.

1. Pukul krim cheese sampai ringan atau kembang. 
2. Campurkan gula dan Whipping Cream.
3. Jangan overbeat. Kalau kurang yakin bila sudah mulai kembang, cek selang 5-10 saat.
4. Siap, boleh suda jilat guna jari XD

Cara 2 (Menggunakan Non-Dairy Whipping Cream)
Non Dairy Whipping Cream ni selalunya kena letak dalam freezer. Dia keras macam batu sikit. Kelebihannya bila dipukul, dia jadi lebih kembang berbanding Dairy Whipping Cream. 
This is the Non-Dairy Whipping Cream that I use. Pastikan tidak berketul-ketul sebelum di whisk.

1. Pukul Whipping Cream dan Cream Cheese secara berasingan. Bila suda kembang, kaupkan (fold)
kedua-dua krim tadi. Boleh tambahkan gula kalau mau.
*Kalau mau tambah gula, campurkan gula bersama krim cheese. Baru satukan.
*Kedua-dua item ni perlu di fold bagi mengelakkan overbeat. 

Whisking cream cheese made easy with an electrical whisk. Use low speed only (1 or 2) to ensure a smooth texture of the cheese. Another tips is to set the cream cheese at room temperature before whisking it. It could help to smooth down the cheese. So you wouldn't have to waste so much effort whisking XD
The icing sugar are to be added while whisking the cream cheese. Keep on whisking until you reach a smooth texture. 

You can tell the cream cheese is ready if you could see such pattern while whisking. It usually take around 2 to 3 minutes to reach this smooth texture or more, depending on how the amount of cheese.

This is the non-dairy whipping cream. The colour is a beautiful white tone. It doesn't look creamy at all at this point. And be sure to whisk on a low speed. This is to prevent you from over blending the cream. When this is ready, it will turn out to be a fresh cream. 

Krim akan mengeluarkan rupa seakan-akan tanduk bila sudah ready. Tadaa... This is ready. For this brand that I'm using (Value Pride) nda perlu pun campur gula sebab memang sudah manis ni.

Bila Whipping Cream suda siap, you could see the pattern.

Kalau nda yakin lagi, kasi tebalik. Memang nda akan jatuh punya. It stays still.. Kalau masih 'runny' keep on whisking. Stop at 5-10 seconds interval untuk cek. Jangan malu-malu mau kasi tebalik.

Last but not least, fold the two creams together and blend it. Lepas tu ready suda, boleh suda cover cake.

So today, I'm making a Snow Cheese Cake. Covering it starts with a cake: 

Mula-mula kasi trim atas dia. Supaya molek ja rata dan lawa bila kena letak krim. Potong tengah, bagi dua supaya boleh letak "filling" di dalam. 2 layer lah kunun.

First thing first is to put a little cream on the board, to glue the cake and the board together, preventing it from moving here and there. I learned this tip via You Tube. You Tube lah sifu ku XD

This is how it looks like bila suda kena krim 1 layer.

Then this is the look after it has been iced. Maafkan lah aku yang amatur ni. Kurang smooth. It's okay because the customer requested untuk Ladies Fingers coating. I'll show it in a while.

Then simply add some Cheddar Cheese on Top. The more, the merrier gitu! Mcamana? Sweet tooth suda? Maaf. 

This is the ladies finger that I've been using. Boleh beli dekat kedai yang jual bahan buat kek. Dan mungkin dekat Giants pun ada. 


And finally it is done. Yihee. I don't mind getting tired. It's the satisfaction that counts.
